Cheese Classes are Back!
Once again it’s time to stuff your brain with fun cheese facts. This time around we’ll be offering two sessions of Cheese 101, due to popular demand, including one session on a Saturday for you weekend warriors.
Fondue!: That’s right, we’re gonna stank it up, and make our own ooey-gooey fondue together. We’ll also talk about what makes an Alpine cheese, then raise our glasses and dip some bread in it.

Taste O’ Ireland: Tiddly-tee tiddly-tee! St. Patrick’s day is coming, so get in the mood with some of Ireland’s bounty.
Wednesday March 12th, 7:00pm.
Cheese 101: Explore the major types of cheese, learn how they are made, and taste some fine specimens along with a nice glass of wine.
Wednesday March 26th, 7:00pm.
Saturday April 5th, 2:00pm.
Charcuterie 101: Join certified meat master Christian Fredrick Remy, as he gets certifiable over the noble swine. You think you know ham?
Saturday April 12th, 2:00pm.

It’s Fondue Time
Let’s all ring in the New Year with some warm gooey goodness. Try our Fondue Recipe:
Ingredients
- 2 Cups (1/2lb) Gruyere or Comte Grated
- 2 Cups (1/2lb) Emmental Grated
- 1 Cup (1/4lb) Beeler Appenzeller Grated (One nose) or 1 Cup Beeler Raclette (Two nose) or 1 Cup Beeler Vacherin Fribourgeois(Three noses!!!!)
- 2-3 Tablespoons of Cornstarch or All Purpose Flour
- 1 Clove of Garlic, cut in half
- 1 Cup of Vin de Savoie (available @ Smith & Vine )
- 1 Teaspoon Fresh lemon juice
- Fresh Grated Nutmeg
- Fresh Ground Pepper
- Splash of Clear Creek Distillery Kirchwasser (available @ Smith & Vine )
- 1 Cup of Love!
Method
- Toss the cheese and cornstarch or flour in a medium sized bowl until coated.
- Rub the inside of a Fondue pot with garlic halves. Add the wine and heat over medium until the wine is hot, but not boiling. Add the lemon juice and Kirsch.
- Add a handful of cheese mixture at a time, stirring constantly with a wooden spoon. Be sure the cheese melts completely before adding the next handful. The finished fondue should bubble gently and has the consistency of a light creamy sauce. Season to taste with pepper and nutmeg.
- Remove pot from heat, and place on the table over a safety burner or other portable heat source. Adjust the heat so fondue continues to bubble gently. Serve with cornichon, salami, plenty of crusty bread, and of course, the rest of the wine and Kirsch. Feel the Love. Prost!!!
