Story: Tallegio is Italy's entrant in the world of washed rind. Taleggio is made in the picturesque valleys of the north central italian mountains. The cheese is a perfect intro to the washed rind style. It smells to high heaven, but the flavor is actually pretty mellow. The flavor is beefy and slightly lactic, with mushrooms...well it's kinda like beef stroganoff.
Pairings: Medium to full bodied whites, Prosecco, Pilsner
