Our Love of Cheese!!!

As you can imagine, our love for cheese and specialty foods is filled with enormous interest and passion. After years of being in the food and wine trade, we have often found that a classic approach to selecting new products has always worked best. If it tastes good and shows excellent value, it will certainly be easy enough to get behind. As it is important to evolve with the products we enjoy so much, we all continue to grow and exercise our palates with the many new and exciting flavors. We look closely for unique expressions and components of balance finding just the right window of ripeness in which the farmer intended.

As we source and taste the best products in the world, we find the same approach we use for wine tasting is best applied. Deconstructing textures and flavors, paying close attention to their aromas and the mid-palate. All the way through to the finish, this is truly the way to best critique these products. It is our job to discover the best of the best out there, and we don't take it lightly. It can be a bit messy and of course difficult, but someone has to do it, and we're willing to sacrifice our lives for your epicurean desires!
