Age: 1-3 months

Story: An American original, this is the only cream added washed rind we know of. It's a nice addition. All of the buttery qualities of it's sister, Mt. Tam. With the hearty, sulphery, meaty flavors of a washed rind. They tend to send this cheese out a little on the young side, but never fear, we at Stinky, never release this one till it's perfectly ripe.

Pairings: California sparkling wine, Pilsners, Alsatian whites.
